Apple-Cinnamon BLONDIE Sandwich (paleo, vegan)

This is how you become a beast at healthy baking: Try a few basic recipes and change it to something different next time.

That’s exactly what I did with this one. I was thinking: “What if I make the brownie without the cacao powder?”. It will become a blondie.

Honestly, I don’t even know what a real blondie is. I remember eating blondies once in a Ben& Jerry’s ice cream, but that’s another story. By the way, can I still get this ice cream flavour? I need it… for a friend of mine.

With the basic 3-ingredient brownie base you can make numerous variations. We already know that cinnamon is good in our diet. So, I replaced the mashed banana for apple purée and added cinnamon. Cinnamon is good for you weight loss and goes perfect with apple.

There you go, an Apple-Cinnamon Blondie. But if that’s not enough, I had to make a sandwich with self-made vanilla sauce for the ultimate food porn pleasure.

You can’t imagine the smell unless you made it!

Apple-Cinnamon Blondie

Ingredients:

  • 8 Tbsp apple puree
  • 4 Tbsp almond or cashew butter
  • 4 Tbsp ground almonds
  • 1 Tbsp coconut flour
  • 1 ½ tsp cinnamon

Instructions:

  1. Preheat the oven at 180°C/ 350°F.
  2. Mix all ingredients together, then make a 3cm thick layer on a baking tray.
  3. Bake for 20min.
  4. Cool down and refrigerate for 30 min.

For the sandwich stack the blondie pieces with apple puree and apple pieces. Sprinkle cinnamon on it and eat it with self-made vanilla sauce from coconut milk.
