Better than dry cookies. Usually soft cookies are full of caramelized sugar and butter.
Not these ones. Yes, they are quite high in carbs and in fat. It’s natural sugar, combined with complex carbs and fat from peanuts. Probably not the best combination to eat every day, but you can eat it occasionally. Maybe on your cheat day?
Anyway, it’s healthier than a sugar-loaded normal cookie and also more filling.
For seven cookies, I mixed 10 tablespoons oatmeal, 7 tablespoons natural peanut butter, 3 tablespoons of maple syrup and a mashed banana. It results in a sticky, tasty batter. Shape it into balls and make it flat on a baking tray.
Into the oven at 180°C/ 350°F for 15 minutes.
It tastes better when you let it cool down before you eat it. Enjoy with coffee or tea.
Soft Peanut Butter Oatmeal Cookies
Ingredients (7 pcs):
- 10 tbsp oatmeal
- 7 Tbsp natural peanut butter
- 3 Tbsp maple syrup
- 1 banana
- Mash the banana with a fork.
- Stir all ingredients together, add the oatmeal last.
- Shape into flat cookies on a baking tray.
- Bake at 180°C/ 350°F for 15 min.
